Emma's Shortbread. Emma is my daughter and was my inspiration to pursue my passion for baking. Emma's Shortbread I have had trouble finding a shortbread recipe that isn't bland. So I found a traditional recipe which I tweaked, and came up with this! Dice your butter or margarine, and mix it with the sugar, either by hand or with an appliance. One of a melt-in-the-mouth, buttery shortbread, the next a thick and creamy caramel and finally chocolate top!
This is my twist on a classic recipe.

Spread the caramel onto the shortbread and put the pie into the fridge and let cool until the caramel is firm.

Ingredients of Emma's Shortbread
Melt the chocolate in the microwave or over simmering water. Add the vegetable oil and spread the chocolate on the caramel. To make the base, pulse butter and flour in a food processor until mixture. On top of being an incredibly versatile and easy recipe to remember, these easy Shortbread Cookies are made in just one bowl and bake up super fast.
Emma's Shortbread instructions
- Dice your butter or margarine, and mix it with the sugar, either by hand or with an appliance..
- Add the flour, vanilla extract, and water..
- Mix until you have a smooth dough. Wrap the dough in clingfoil, and refridgerate for 30 minutes..
- Take out your dough and place it on a floured surface. Sprinkle some flour on top of the dough and then add some to a rolling pin..
- Roll out your dough so it is roughly 1,5cm/1in thick..
- Cut your cookies into "bars" and just make a pattern on them with a fork. Do NOT go all the way through the cookie, just press down very lightly with the fork..
- Line a baking tray with some parchment paper or baking paper or the equivalent..
- Put your cookies on the baking tray and sprinkle lightly with caster/granulated/refined sugar..
- Bake in the oven at 190 celsius/350F for roughly 12-18 minutes or golden..
- Take them out from the oven and let them cool on the tray for about 3-4 minutes..
- Transfer to a wire rack and let them cool completely. Enjoy!.
All you have to do is mix up the dough, roll it into a log, let it chill and then slice them into perfect little rounds.
