- Preheat the oven at 350°F/180°C. Mix the 20gms sugar and desiccated coconut and set aside..
- Sieve flour, baking powder and bicarbonate soda..
- Rub in butter/margarine until the texture becomes that of bread crumbs..
- Mix in sugar and desiccated coconut..
- Add eggs and coconut flavor(optional) and mix to a stiff dough..
- Roll out and cut into shapes..
- Dust the cut outs in the sugar and desiccated coconut mix and place in a lined baking tray. I used parchment paper to line mine. This is optional as you can bake them as they are..
- Put in oven and bake for 15-20 mins or until slightly brown..
