In a large bowl, beat shortening and sugars until blended. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into sugar mixture. - In a large bowl take aata, maida, dessicated coconut, baking powder, elaichi powder. Mix them all and keep it aside..
- Now take another bowl and add ghee and powdered sugar in it and whisk it till it becomes light and fluffy/frothy. This method is called "creaming"..
- Now add this cream (sugar-ghee mixture) to the dry ingredients and jst mix them gently to form a dough, donot Knead it, jst mix it..
- Now pre-heat the kadhai for 7 mins in medium flame as shown in pic 1., covering it as in pic 2. Now grease a plate with some oil as in pic 3..
- Make pedas out of the dough. Slightly flatten it and coat it with coconut powder and place them in a tray/plate. Now place it in the kadhai, cover it and bake it in a low flame for about 25 mins.. flipping it gently after 20 mins once. Make the same with the other batch too. Let them cool down completely or come at a room temperature. You can then store them in a air-tight container for about 20 days..
Let me preface this post with the fact that I have been living quite the coconut moment lately. We love baking cookies in our home, like A LOT!! The kids love helping and we all love eating!!
