Sift in the flour and cornflour, then add the cocoa powder and mix until smooth (if the mixture feels a little stiff, add a few drops of water to loosen).   5. Roll mixture into balls (approx a teaspoon size) and place on cookie tray and press the balls with a fork to slightly compact them and to get that melting moment pattern on top! Allow space between them as they will expand..
  6. Place in the oven for approx 15 minutes or until cooked. They will be very soft to the touch and will need to cool on the tray before placing on a cooling rack..
  7. For the filling combine the remaining 20 gms of butter and 125 gm icing sugar in your food processor and mix until pale and fluffy. Add vanilla extract, lemon juice and food colouring (optional) and mix well..
  8. Place some of the filling (approx a teaspoon) on one cooked biscuit then place another biscuit on top to make melting moments! Repeat until all of your biscuits are filled. Then enjoy!.
