This cookie recipe turns out to be incredibly flavorsome and has gooey bits of chocolate throughout it. It's perfect by itself or you can make it even better with a scoop or two of vanilla bean ice cream. Trust me - I've tried forming dough into balls and cooking it in the microwave, and it really doesn't work without the mug. It's similar to making a mug cake, only the ingredients are a little different so that we end up with a cookie that's chewy instead of moist and fluffy like a cake.

- Divide evenly between your cups / ramekins (don’t fill to the top because they expand as they cook). Pop them into the microwave for approx 60-90 seconds depending on your microwave power. I took mine out when they had risen to the top with little bubbles which was approx 1.20 minutes. You can leave to cool down for 5 minutes if you like. Enjoy 💕.

I use two ramekins for these - which are a decent size but it makes the cookie look 'full'. You can use any mug that is microwave safe but the cookie doesn't really rise so beware of that! Soft and doughy, this mug cake is gluten-free and made without butter or oil. It doesn't have to be large, as the cookie doesn't rise like microwave cakes do, if at all.
