These are basically keto copycat Red Lobster cheddar bay biscuits. They come out with your dinner and they are utterly addicting. Prepare a baking tray by covering it with a sheet of baking paper. Place rondo baking rings on the paper, making sure to keep a small distance between the rings.

- Pre heat oven fan assisted to 162° gas mark 3 and line baking tray with greaseproof paper.
- Cream the butter & sugar.
- Beat in the egg yolks.
- Add flour, ground almond, baking powder, salt & almond extract & give good mix then use blunt knife to make a dough, then use back of a spoon till it comes together..
- Knead dough until smooth, then using flour roll out to 1/4" thick.
- Cut into desired shapes, be creative I used fluted round cookie cutter then a flower fondant cutter for the middle. I got 24..
- Put in oven, middle shelf fan assisted 162° for 20 minutes, until light brown & crisp..
- After a few minutes transfer to wire rack to cool..
