Microwave cookie dough - mug cake. Cookie dough in a mug is a great solution as you can quickly make it in a regular-sized mug. This cookie recipe turns out to be incredibly flavorsome and has gooey bits of chocolate throughout it. It's perfect by itself or you can make it even better with a scoop or two of vanilla bean ice cream. Trust me - I've tried forming dough into balls and cooking it in the microwave, and it really doesn't work without the mug. It's similar to making a mug cake, only the ingredients are a little different so that we end up with a cookie that's chewy instead of moist and fluffy like a cake.

My grandparents were the first ones to get one. I use two ramekins for these - which are a decent size but it makes the cookie look 'full'. You can use any mug that is microwave safe but the cookie doesn't really rise so beware of that! Soft and doughy, this mug cake is gluten-free and made without butter or oil.
Microwave cookie dough - mug cake instructions
- You’ll need a medium size bowl. Mix together the butter and the sugar to make a paste and slowly add the egg and the vanilla. Then add the flour, salt and bicarbonate of soda. Mix the dough together and add the chocolate chips..
- Divide evenly between your cups / ramekins (don’t fill to the top because they expand as they cook). Pop them into the microwave for approx 60-90 seconds depending on your microwave power. I took mine out when they had risen to the top with little bubbles which was approx 1.20 minutes. You can leave to cool down for 5 minutes if you like. Enjoy 💕.

My Mug Sugar Cookies have all the ingredients of those sweet frosted sugar cookies, with out any of the fuss. Usually when making a traditional sugar cookie recipe you have to get out your electric mixer, mix up the cookie dough, allow it to chill in the fridge, then you can finally roll them out and bake them. It doesn't have to be large, as the cookie doesn't rise like microwave cakes do, if at all. The power of individual microwave oven varies, so take a look and stop microwaving when the center is set and the edges look still uncooked. The cookie should continue being cooked and get firmer out of the microwave oven.
