Baking is like a hobby for me, so after a little tweaking, I think I have created the PERFECT COOKIE for my family! Ingredients of Coconut cookies

  1. It's 3 c of all purpose flour.
  2. Prepare 1/2 tsp of baking soda.
  3. You need 3/4 c of partially melted butter.
  4. Prepare 3/4 c of powdered sugar.
  5. It's 2 of eggs.
  6. It's 1/4 tsp of salt.
  7. It's 1/2-3/4 c of dessicated coconut (see my recipe for this).
  8. Prepare 1 tsp of vanilla extract.
  9. Prepare 1 tsp of vinegar or lemon juice.

In a large bowl, beat shortening and sugars until blended. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into sugar mixture. I may even add some more oatmeal and coconut so that the cookie has more substance. In my opinion this is a great base for you to make alterations until it suits your taste.

Coconut cookies step by step

  1. Sift flour, sugar, salt and baking soda together. Mix well. Whisk in coconut and mix well.
  2. Whisk butter, eggs, vanilla and vinegar. Mix with dry ingredients until it all comes together. Wrap In cling film and refrigerate for at least 30mins.
  3. Preheat oven to 180°c. Roll out dough, sprinkle a little coconut on top and roll lightly on the dough so they stick. cut out cookies of desired shapes. Bake for 15-20mins. Let cool and enjoy.

One of our all-time favorites is this Oatmeal Coconut Cookies recipe (they're different from our Classic Oatmeal Cookies recipe, which we love too).
