Rolled Cookies (Roll Kuchen). Oh, the memories of this recipe! This is a favourite Mennonite Tradition for a summer meal. This is my mom's favourite recipe for Roll Kuchen. I remember fondly the time my parent's spent making this and how they doubled and tripled the recipe for family gatherings. To non-Mennonites the idea of having these with watermelon strikes them as very strange--Watermelon and doughnuts??!!??

  2. It's 1 cup of whipping cream.

  4. You need 1/4 cup of butter or margarine.
  5. It's 1/2 tsp of salt.
  6. You need 1 pinch of baking powder.
  7. It's 2 cup of all purpose flour.

Make a cut in the centre (but not from edge to edge). Take an end and pull through the middle. Growing up in a Russian Mennonite** home, the best summer memories usually included Roll Kuchen and Rhebuze. The direct translations of these are "rolled cookies" and "watermelon", though the term rolled cookies is a bit of a misnomer.

  1. Preheat oil for deep frying between 360-375 degrees Fahrenheit.
  2. Mix all ingredients EXCEPT flour.

  6. Fry squares for 30 seconds or so flipping once.
  7. Serve with side of fresh fruit, or try stuffing with strawberries before frying!.
