I remember fondly the time my parent's spent making this and how they doubled and tripled the recipe for family gatherings. To non-Mennonites the idea of having these with watermelon strikes them as very strange--Watermelon and doughnuts??!!??

- Prepare of Dough.
- It's 1 cup of whipping cream.
- You need 2 of eggs.
- You need 1/4 cup of butter or margarine.
- It's 1/2 tsp of salt.
- You need 1 pinch of baking powder.
- It's 2 cup of all purpose flour.
Make a cut in the centre (but not from edge to edge). Take an end and pull through the middle. Growing up in a Russian Mennonite** home, the best summer memories usually included Roll Kuchen and Rhebuze. The direct translations of these are "rolled cookies" and "watermelon", though the term rolled cookies is a bit of a misnomer.
Rolled Cookies (Roll Kuchen) instructions
- Preheat oil for deep frying between 360-375 degrees Fahrenheit.
- Mix all ingredients EXCEPT flour.
- Add in flour until mixture is sticky (just enough to be rolled). Approximately 2 cups, but less is more.
- Sprinkle counter with flour and roll out dough in thin sheets.
- Cut rolled dough into squares with two small slits cut out of centers (this helps them stabilize in oil).
- Fry squares for 30 seconds or so flipping once.
- Serve with side of fresh fruit, or try stuffing with strawberries before frying!.
Wrap the dough up and refrigerate it for a few hours. Letting it sit makes it so much easier to roll out. Rolling it thin, makes a crisper roll kuchen and leaving it a bit thicker makes for a softer. Into bowl, sift flour, baking powder and salt. Make a well; add cream and eggs, mixing well.
