- It's 50 grams of Fresh okara.
- Prepare 40 grams of Rice flour (Joshinko or rice flour for baking).
- Prepare 10 grams of Sugar (such as raw cane sugar or light brown sugar).
- Prepare 20 grams of Processed cocoa.
- It's 1 tbsp of Olive oil (or any other oil).
- Prepare 2 tbsp of Soy milk (or regular milk).
I think the ones at the supermarket are deep-fried, but toasted mochi is tasty as well. These mochi will harden with time,. Okara is the solid fibrous part of the soya paste left after the removal of the soya milk for tofu making. Okara cutlets are prepared by mixing the okara with the boiled potatoes.

- [Prep] Preheat the oven to 170°C..
- Combine the fresh okara, rice flour, cocoa and sugar in a bowl and give everything a quick stir together. If you measure everything straight into the bowl you'll save on washing up later..
- Pour in the olive oil and give everything a mix. The mixture will turn a bit crumbly but don't worry if the dough doesn't start to come together yet..
- Add in the milk and mix again. Once the dough comes together, it's ready. If it's not coming together well, add some more oil..
- Form the dough into a tight ball..
- Bake the cookies for 30 minutes at 170°C. The outside will be nice and crunchy and the inside will end up deliciously chewy! They're done..
