In a bowl, sift together flour, baking powder and salt. Whisk together sugar, apple butter, sour cream, oil and egg substitute. In another bowl, whisk together flour, cocoa, salt and baking soda. Stir flour mixture into sugar mixture; mix just until blended.

- Combine butter, granulated sugar and light-brown sugar. Whisk on medium speed until light and fluffy..
- Reduce speed speed to low then add salt, vanilla extract and eggs. Beat until well mixed (about 1 minute)..

- OPTIONAL: Fold in cocoa powder to make it extra extra chocolaty..
- Stir in chocolate chips..
- Heap tablespoons of dough 2 inches apart on a flat tray (mine never stuck to the tray) or into a muffin tray..
- Chop up milk chocolate bars into small pieces approx. ½ the size of your pinkie nail..
- Push 2 pieces (or more) of milk chocolate bits into each heap of dough..
- Leave in the oven until cookies are golden at the edges but still soft in the center (10-15minutes)..
- Remove from oven and leave on pan to cool completely..
The cookies will appear very pale and not completely baked when you take them out. This is the beauty of the super soft cookie and why they are so delicious. Also, the cookies will firm up as they cool. These cookies are delicious, and true to their word; soft, chewy, and super easy to make I add a pinch of cinnamon and nutmeg to mine, with a little bit of instant coffee powder to bring out the bitterness in the chocolate, and these are the best chocolate chip cookies I've had.
