Banana Cookies. An oatmeal banana cookie with chocolate chips and peanut butter. The cookie consists of delicious ingredients, and we hope you enjoy it. This banana cookie recipe came from my grandmother, Sybil Capune. She made me fresh orange juice in the mornings, loved her toast burnt, and was an amazing home cook. When I inherited her recipe boxes, each filled with yellowed hand-typed note cards, I began exploring my family's culinary history.

Ingredients of Banana Cookies

  1. You need 1 1/4 c. of flour.
  2. Prepare 1/2 tsp. of soda.
  3. It's 1/2 tsp. of salt.
  4. It's 1/4 tsp. of cinnamon.
  5. You need 1/2 c. of shortening.
  6. Prepare 1/4 tsp. of nutmeg.
  7. It's 1 c. of sugar.
  8. Prepare 1 of egg.
  9. It's 3/4 c. of banana, diced or mashed.
  10. Prepare 1-3/4 c. of oats.
  11. Prepare 1/2 c. of chopped nuts.

Second I added close to a cup of ground walnuts I processed in the food processor. I had some left over ripe bananas and I am getting tired of making banana bread. Wanted a change and found this recipe. It really wasn't something that I would normally try, but I am glad that I did.

Banana Cookies instructions

  1. Mix dry ingredients. Cream the shortening and sugar together, add the egg and the banana. Add the dry ingredients stir well..
  2. Drop by teaspoonful onto cookie sheet. I line my cookie sheets with parchment paper..
  3. Bake at 375°F for 13 to 15 minutes. Makes about 3 dozens, depends on size..
  4. For, bar cookies 13x9 inch dish metal pan 350°F for 25 minutes.

These are wonderful, although next time I would skip the raisins and add chocolate chips instead. I can't remember how many cookies I got out of a mix, so I will guess. To help interest my kids in cooking, I started with this recipe from my childhood. My mom made these oatmeal banana cookies when I was young. Now my children like them as much as I did, and we quadruple the recipe to serve our large family.
