I had to stop myself from eating another and another. These go Way beyond ordinary cookies. Dare I say these make the perfect breakfast, well, there is oatmeal and maple and bacon and those are all breakfast items, but these are really great when it's not breakfast time. The bacon in these cookies reminds me of how delicious walnuts are in chocolate chip cookies.

- Cream butter and sugars until fluffy. Add eggs and both extracts. Beat well..
- Mix dry ingredients in bowl together and add slowly to the batter. Add chips and bacon and mix well..
- Preheat oven to 350°F. Line sheets with parchment paper and take spoonful of dough and roll into walnut sized balls and place 2 inch apart. Bake about 8 min. Cool and enjoy!.
Slightly crisp on the outside and soft and chewy on the inside. I also used a lot more bacon and chocolate than called for. Instead of using the maple extract I just smothered the bacon in maple syrup and brown sugar when I cooked it. Bacon really does make everything better. It gives these easy oatmeal cookies a hint of smoky flavor and a little bit of crunch.
